These are tasty and easy! What could be better? I threw these together with the Butterscotch and Chocolate Chip Bars and they are holding their own. Today I’m making them to get my little middle (my middle boy who’s 2) out of his brother’s “butt” and into the kitchen to help me make something.
Here’s the super simple recipe:
No-Bake Peanut Butter Rice Chews
From 500 Best Cookies, Bars & Squares

2/3 c. corn syrup
2/3 c. smooth peanut butter
1/2 c. lightly packed brown sugar
2 1/2 c. crisp rice cereal
1 c. shredded coconut
1/2 c. chopped nuts
In a large saucepan, over low heat, combine corn syrup, peanut butter and brown sugar. Stir constantly until sugar is dissolved and mixture is smooth.
Remove from heat and stir in the remaining ingredients until well combined.
The recipe calls for the mixture to be dropped by spoonfuls on a wax paper covered cookie sheet. I’ve gotten a bit lazy with my cookie making lately, so I simply put the mixture into a greased glass Pyrex and pressed it out evenly.
Refrigerate until set.
These are tasty! I used almonds the first time I made them and peanuts the second.

This is exactly the kind of recipes I like. Easy to make and bake and you are able to experiment and add other ingredients for a different taste every time. Thanks for sharing.
