I had a mountain of berries in the freezer and wanted to figure out something to do with them. A fruit crisp was always at the front of my mind and when I ran across this recipe I decided to put it into action. I only tried one bite, but it was great and my kids LOVED it! You’d be amazed at how much more of their dinner they eat when there’s a “Special” dessert after it. This is pretty special in my house, I never make dessert. lol
Fabulous Fruit Crisp

They don’t list nutritional information in the magazine, but if you go to the site you’ll probably be able to find it.
Topping:
3/4 c. rolled oats (I didn’t have regular oats, so I used a packet and a half of blueberry muffin instant oatmeal)
1/2 c. chopped walnuts (we don’t like them, so I just omitted)
1/8 c. whole wheat flour
1/8 c. white flour
3 T. butter, at room temperature
1/2 t. cinnamon
1/4 t. nutmeg
Squish it all together until it’s crumbly.
Filling:
6 c. peeled and sliced fruit (they say apples…blah, blah. Use what you have or want)
1/3 c. maple syrup (I don’t think it hurt that I just used a little Eggo syrup)
1 T. cornstarch
Toss the filling together without squishing the berries too much.
Spray an 8″ pan with cooking spray and dump the filling in. Even it out. Crumble the topping on to cover the berries (or other such fruit) and bake for about 30 minutes or until your filling is soft (the berries will start that way) and your topping is brown and crunchy.
Best warm and tasty, but whatever is tastiest for you. Reheats fine in the microwave too. Add some whipped cream or ice cream and make it a real sweet treat!
