This has got to be my favorite go to meal when I want something warm and comforting. Now that the days are getting shorter and the temperature keeps going down, I find myself wanting more and more comfort food. And how can you go wrong with mashed potatoes and gravy? I usually make this recipe with pork chops but the chicken was just as delicious.
Ingredients
• 4 chicken breasts or (1 1/4 inch thick) pork chops
• salt and pepper to taste
• 1 tablespoon butter
• 3/4 cup milk
• 1/4 cup water
• 1 can cream of mushroom soup
Directions
1. Preheat oven to 350 degrees.
2. Season chicken with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Sauté the chicken in the butter for about 3 minutes per side.
3. In a separate medium bowl, combine the milk, water and soup. Place the chicken in a 9×13 inch baking dish and pour the soup mixture over the chicken.
4. Bake at 350 degrees for 45 minutes.
Serve with mashed potatoes or rice.
