Magic Meatballs

FINALLY…a food my husband likes. Let’s just say I’ve been trying to incorporate healthier food, but my husband isn’t buying in. I don’t eat red meat and eat much healthier than he does so I spend many nights cooking two different meals for dinner. It’s a little exhausting, but what are you going to do? lol

But, last nights meatballs were a great success! “Best meatballs I’ve ever had”. In my house those words are golden. I even pretended like I didn’t hear him just to hear it again…and again…until he caught on. :)

I’m not big on measuring, but here’s what I did…

  • One pound ground beef
  • A couple of squares of leftover cornbread
  • Salt
  • Pepper
  • Chili Powder
  • Cumin
  • Worchestshire Sauce
  • Ketchup
  1. Put the ground beef in a bowl, dump in some ketchup, a few shakes of Worch. sauce, some salt pepper, a healthy amount of chili powder and cumin.
  2. Crumble in the corn bread and squish the whole thing together until it’s all well combined.
  3. Roll into balls and place on a cookie sheet.
  4. Bake at 400 degrees for about 15 minutes or until brown on the outside and cooked on the inside.

No, I don’t use eggs or anything. I find the eggs never incorporate completely and I get these weird strings of egg in them and it’s gross.

I made some chimichiri rice and broccholi with them. My husband put country gravy on them.

Mine had a bit of a Mexican feel because I was going off the flavors of the corn bread, for other ideas see below.

However you serve them, they are delish and something the whole family with love.

Want to take it to the next level?

  • Use whole grain or bran muffins instead.
  • Use the leanest ground beef or ground chuck you can find.
  • Add Cayenne powder for a spicy meatball.
  • Use curry powder instead of the chili powder for a Middle Eastern flavor.
  • Use finely chopped garlic and oregano for an Italian flavor.
  • Use BBQ sauce or salsa instead of ketchup for a Southwest flavor.
  • Use soy sauce and finely chopped ginger for an Asia flavor.
