So in an attempt to save a little money on the monthly grocery bill I have been trying to eat the food tucked away in my pantry. The other night I found a package of the ready to serve salmon. So I decided I would make salmon cakes. Really easy and you can use pretty much whatever you have in your fridge.

Salmon Cakes with Lemon Dill Sauce
1/4 cup chopped red and green bell pepper
1/4 cup chopped poblano pepper
1/4 cup chopped green onion
1/4 cup mayonnaise
1 Tbs fresh squeezed lemon juice
1/4 tsp garlic salt
Chipotle chile powder to taste
1 7oz pouch skinless boneless salmon
1 egg, beaten
1 cup dry breadcrumbs, divided
3 Tbs butter
In bowl, combine peppers, onions, mayonnaise, lemon juice, garlic salt and chipotle powder. Stir in salmon, egg and 1/4 cup of the breadcrumbs; mix until well blended. Form mixture into balls and roll in remaining breadcrumbs then flatten the balls into cakes about 1/2 inch thick.
Melt butter in skillet over medium heat, fry cakes until golden brown. Serve immediately with lemon dill sauce.

Lemon Dill Sauce
3/4 cup mayonnaise
3/4 cup sour cream
1 Tbsp lemon juice
1 Tbsp prepared horseradish
1 tsp dill weed
Salt and pepper to taste
Combine ingredients together and refrigerate until ready to serve.
