What's for Dinner?

But in all seriousness, it was kid friendly in the most terrible way. Call it tired, lazy or just sick of hearing them chatter, I made fried chicken tenders. Not deep fat friend, skin on, hunkin’ pieces of chicken with coleslaw, taters and biscuits. I had to draw the line somewhere. Plus, there was left over corn and potatoes in the fridge from last night. (I know, I know)

This is starting to sound like a bad TV sitcom.

So, what’s for dinner….

  • Cream Corn (from a can, popped it in the microwave)
  • Crispy Potatoes (had my hubby make these the night before for a different dinner)
  • Crispy Chicken Tenders

Crispy Chicken Tenders

Disclaimer: I only buy chicken tenders now because they are just easier. Small so they cook faster and for little hands.

Dust with flour, into the egg, into the Panko. Then into a deep pre-heated pan with about one inch of canola oil in it.

Note: Canola oil has a high smoking point, as does olive oil, but will not leave the taste of olive oil allowing the food to taste like you want it to.

Given them about 2-3 minutes on each side and move to a plate covered with paper towels to drain.

I just sliced mine up and asked what dip-it they wanted. Of course, they all wanted something different. Ahhhh the life of toddlerhood.

Crispy Potatoes

Peel potatoes of your choice and put them through a mandolin, the straight side of your cheese grater or the shred side of your cheese grate. Doesn’t really matter, pick the shape of your choice.

Heat a pan on medium high and put just a swirl of oil in the pan. Put the potatoes in the pan and make sure the entire bottom of the pan is covered and the potatoes are all flat. Season with whatever your favorite seasonings are. Give it about 7 minutes, then stir or flip them. Cook in the other side until crispy.

Now, don’t quote me on any of the times. Let’s be honest, do you watch the clock while you’re cooking. I tend to be trying to cook, yelling at kids and warding off emails and work all at the same time.

I don’t know about you, but there are some days I wonder how my kids are dressed, fed, watered and changed throughout the day. Here’s to all the mommy’s out there just trying to get through the next dayhour. May we live long enough to get them in school, if only for two hours a day.
